You don’t have to be a chef to whip up this delectable mango cobbler. It utilizes simple ingredients, is bursting with nutrients, and is sure to delight even the most carnivorous house guest you cook for.

The author and chef shares that plant-based cooking is for everyone – especially when it comes to creating desserts that you want to satisfy your sweet tooth but not negatively impact your waistline. She writes:
“The best way to win over any foodie is to create a healthy, tantalizing dessert recipe like mango cobbler. The best part about this recipe is that it doesn’t require ANY cooking, yet still compares taste-wise to the traditional, cooked version. Because this dish is classified as a ‘raw’ dessert, it retains life-promoting enzymes, is chock full of nutrients, and has way more flavor than many treats out there.”
Mango Cobbler
Preparation Time: 15 minutes Servings: 4
Ingredients:
Crust:
1 1⁄4 cups almonds
1 vanilla bean or 1 teaspoon vanilla extract
1/2 cup pitted dates
2 tablespoons coconut oil
Filling:
4 cups mangoes (diced)
1/4 cup raw honey or agave
Dash of cinnamon and vanilla
Directions:
- To make crust, place almonds, vanilla, and salt in a food processor and lightly process into small pieces. Add dates and coconut oil, process to mix well.
- In a bowl, combine filling ingredients and mix together.
- In your serving bowl or pan, sprinkle a bit of crust, add a scoop of filling, and then add some more sprinkles of the crust on top. Don’t forget a scoop of love! <3
